Puerto Rican Fried Pork Chops (Chuletas Fritas)

Puerto Rican fried pork chops (chuletas fritas) are marinated with adobo and sazon, then pan-fried until deep golden and crisp. The crunchy crust gives way to a juicy, well-spiced interior—perfect alongside white rice, pink beans, and lime.

Ingredients

Pork chops
  • 4 thin pork chops (bone-in preferred) Choose thin cuts for faster, even frying.
  • 1 tbsp adobo seasoning For the marinade.
  • 1 tsp sazon seasoning Adds color and flavor to the adobo-style marinade.
  • 1 tsp garlic powder For a bold, savory garlic note.
  • 1 tsp dried oregano Classic Puerto Rican herb for a warm aroma.
  • 1 tbsp white vinegar Brightens the marinade and helps tenderize.
  • 2 tbsp olive oil Helps the seasonings adhere.
  • salt and pepper to taste Season to preference before frying.
  • oil for frying Use enough to reach about 1/4 inch in the skillet.
  • lime wedges Serve on the side for finishing.
  • white rice For serving.
  • pink beans For serving.

Equipment

  • 1 heavy skillet

Method

Marinate the pork chops
  1. In a bowl, mix adobo seasoning, sazon seasoning, garlic powder, dried oregano, white vinegar, and olive oil until combined and evenly coated over the pork chops; add salt and pepper to taste as you coat. Marinate for 30 minutes to 2 hours for maximum flavor penetration.
Fry until deep golden
  1. Heat 1/4 inch of oil in a heavy skillet over medium-high heat until shimmering. Keep the oil at a steady shimmer before adding the chops.
  2. Place the pork chops in the hot oil and fry 4–5 minutes per side until deep golden brown and cooked through. Flip once and avoid overcrowding so the crust stays crisp.
  3. Transfer the fried pork chops to paper towels and drain briefly. Let the surface stay crisp while excess oil drains off.
Serve
  1. Serve the chuletas fritas hot with white rice, pink beans, and lime wedges. Squeeze lime over the chops just before eating.

Notes

Pro tip: keep the oil at a steady shimmer—if it’s smoking the crust can brown too fast while the center stays undercooked. Refrigerate cooked pork chops in an airtight container up to 3 days; reheat in a hot skillet or oven until the exterior crisps again (avoid microwave-only reheating). Freezing is not recommended for best texture. For a lower-fat option, choose thinner chops and use a shallow-fry approach with less oil (you may need slightly longer frying time).
