Ingredients

Goat cheese log, chilled
  • 10 oz goat cheese log, chilled Use a log form that slices cleanly for a neat center.
Cream cheese
  • 4 oz cream cheese, softened Soften until spreadable for a smooth filling.
Bacon
  • 6 slices bacon, cooked crisp and finely chopped Cook until crisp, then chop finely so it coats evenly.
Pecans
  • 0.3333 cup pecans, toasted and finely chopped Toast briefly for deeper flavor and better crunch.
Cranberries
  • 0.25 cup dried cranberries, chopped Chop for even distribution through the coating.
Chives
  • 1 tbsp fresh chives, chopped Add color and mild onion bite to the coating.
Honey
  • 2 tbsp hot honey or regular honey Warm honey lightly if needed for a clean drizzle.
Crackers
  • 1 crackers for serving Serve alongside for scooping and spreading.

Method

Make the cheese log
  1. Beat goat cheese and cream cheese until smooth, then shape the mixture into a log.
  2. Wrap the log in plastic wrap and chill for 30 minutes until firm.
Coat and assemble
  1. Combine bacon, pecans, cranberries, and chives on a plate.
  2. Roll the chilled log in the mixture, pressing to coat on all sides.
  3. Transfer the coated log to a serving board and drizzle with honey.
  4. Serve with crackers.

Notes

Pro tip: chop the bacon and nuts finely so every bite gets creamy cheese plus even crunchy coating. Store covered in the refrigerator up to 3 days; freeze is not recommended because the coating can soften. For a lower-fat option, use reduced-fat cream cheese (texture may be slightly softer but still works).
