Ingredients
  

Ground beef
  • 1.5 lb ground beef (80/20)
Patties binder
  • 0.33 cup breadcrumbs
  • 1 egg
  • 1 tbsp Worcestershire sauce
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 salt and pepper to taste
Gravy base
  • 2 tbsp butter
  • 1 large onion, sliced
  • 8 oz mushrooms, sliced
  • 2 tbsp flour
  • 2 cup beef broth
  • 1 tsp Worcestershire sauce
Finish
  • 1 Fresh thyme for garnish

Method
 

Make the beef patties
  1. Mix the ground beef with breadcrumbs, egg, Worcestershire sauce, garlic powder, onion powder, salt, and pepper, then form into 4 oval patties.
Sear and simmer
  1. Sear the patties in a skillet over medium-high heat for 3–4 minutes per side until browned, then remove and set aside.
  2. In the same skillet, melt the butter and cook the onion and mushrooms over medium-high heat for 5–6 minutes until golden.
  3. Sprinkle the flour over the onion and mushrooms and cook for 1 minute.
  4. Whisk in the beef broth and the remaining Worcestershire sauce until smooth.
  5. Return the patties to the gravy, cover, and simmer for 12–15 minutes until the patties are cooked through and the gravy is thick.
  6. Garnish with fresh thyme and serve with mashed potatoes.

Pro tip: For the best sear, press patties into a consistent thickness so they cook evenly. Refrigerate leftovers in an airtight container for up to 3 days; reheat gently in a skillet with a splash of broth. Freezing is yes—cool, then freeze in gravy for up to 2 months and reheat until hot. For a lighter option, use 90/10 ground beef and add 1–2 tbsp extra broth to keep the gravy rich.
