Ingredients

Pork chops
  • 4 bone-in pork chops 1 inch thick
  • Lemon wedges for serving
Marinade
  • 3 tbsp olive oil
  • 3 garlic cloves, minced
  • 2 tbsp lemon juice
  • 1 tbsp soy sauce
  • 1 tsp smoked paprika
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 0.25 salt and black pepper to taste
  • 0.25 black pepper to taste

Equipment

  • 1 grill

Method

Make the marinade & marinate
  1. Mix olive oil, minced garlic, lemon juice, soy sauce, smoked paprika, dried thyme, dried rosemary, salt, and black pepper until combined, then coat the bone-in pork chops. Let marinate at room temperature for at least 30 minutes or refrigerate up to 4 hours.
Preheat & prepare grill
  1. Preheat the grill to medium-high and oil the grates. Keep the lid closed as it heats so the grill reaches steady temperature before cooking.
Grill the pork chops
  1. Remove the chops from the marinade and shake off excess, then place them on the grill. Grill for 4–5 minutes without moving until grill marks form, then rotate 45° for crosshatch marks and cook 1 more minute.
  2. Flip the pork chops and grill for 4–5 more minutes until the internal temperature reaches 145°F. Continue cooking only until they hit temperature to keep the interior juicy.
Rest & serve
  1. Rest the pork chops for 5 minutes on a platter before slicing or serving. Serve with lemon wedges for brightness over the smoky char at the edges.

Notes

For best juiciness, aim for thick, bone-in chops and don’t skip the 145°F target—carryover heat finishes them while they rest. Refrigerate leftovers in an airtight container for up to 3 days; freeze cooked chops up to 2 months. For a lower-sodium option, use low-sodium soy sauce and reduce added salt to taste.
