Toast the pecans
- Melt the butter in a small skillet over medium heat, then add the pecans and brown sugar. Stir until the mixture looks evenly coated.
- Toast for 3-4 minutes over medium heat, stirring, until the pecans are fragrant and lightly candied. Transfer to parchment (or spread out) to cool.
Assemble the goat cheese log
- Place the goat cheese log on a serving board. Position it so you can easily spoon toppings down the sides.
- Spoon the fig jam over the top, letting it run down the sides. Add enough to create a glossy coating.
- Scatter the candied pecans and chopped rosemary over the fig jam. Make sure the nuts are visible on top.
- Drizzle with honey and sprinkle with flaky sea salt. Serve immediately with crackers and sliced pears.
Notes
Pro tip: cool the candied pecans completely before topping so the jam stays thick and glossy. Store assembled portions in the refrigerator up to 2 days; the crackers may soften, so keep them separate if possible. Freezing is not recommended for best texture. For a dairy-light option, use an aged goat cheese substitute or reduced-fat goat cheese log if available, and keep the topping amounts the same.
