Caramelize the onions
- Melt the butter in a Dutch oven over medium-low heat and add the thinly sliced onions with a pinch of sugar. Stir often and cook for 25–30 minutes until deeply golden, then set aside.
Form and cook the meatloaf in the slow cooker
- In a large bowl, mix the ground beef, breadcrumbs, eggs, milk, French onion soup mix, Worcestershire sauce, and salt and pepper until evenly combined. Keep the texture cohesive without overmixing.
- Line the slow cooker with a foil sling, then shape the meat mixture into a loaf and place it in the liner. Press lightly to help it hold together.
- Top the loaf with half of the caramelized onions. Spread evenly so the onions sit on the surface.
- Cover and cook on Low for 5–6 hours or High for 2.5–3 hours, until the internal temperature reaches 160°F. Start checking near the end of the listed time for doneness.
Melt the cheese and serve
- Layer the remaining onions and the Swiss cheese over the top of the meatloaf. Cover and cook on High for 10 minutes until the cheese melts and looks glossy.
- Lift the meatloaf out using the foil sling and rest for 10 minutes before slicing and serving. This lets the juices set so the loaf cuts cleanly.
Notes
Pro tip: For best texture, avoid overmixing the meat—combine just until the binder is evenly distributed. Refrigerate leftovers in an airtight container for up to 3 days; freeze for up to 2 months (wrap slices well). For a lighter option, use lean ground beef (90% or higher) to reduce fat while keeping the French onion flavor.
