Ingredients

Meatloaf
  • 2 lb ground beef
  • 0.667 cup breadcrumbs
  • 2 eggs
  • 0.333 cup milk
  • 1 packet (1 oz) French onion soup mix
  • 2 tbsp Worcestershire sauce
  • 0.25 salt and pepper to taste Use to season to your preference; add as directed.
Caramelized Onions and Cheese
  • 3 large onions, thinly sliced
  • 2 tbsp butter
  • 0.5 tsp sugar
  • 4 slices Swiss cheese

Equipment

  • 1 Dutch oven
  • 1 slow cooker

Method

Caramelize the onions
  1. Melt the butter in a Dutch oven over medium-low heat and add the thinly sliced onions with a pinch of sugar. Stir often and cook for 25–30 minutes until deeply golden, then set aside.
Form and cook the meatloaf in the slow cooker
  1. In a large bowl, mix the ground beef, breadcrumbs, eggs, milk, French onion soup mix, Worcestershire sauce, and salt and pepper until evenly combined. Keep the texture cohesive without overmixing.
  2. Line the slow cooker with a foil sling, then shape the meat mixture into a loaf and place it in the liner. Press lightly to help it hold together.
  3. Top the loaf with half of the caramelized onions. Spread evenly so the onions sit on the surface.
  4. Cover and cook on Low for 5–6 hours or High for 2.5–3 hours, until the internal temperature reaches 160°F. Start checking near the end of the listed time for doneness.
Melt the cheese and serve
  1. Layer the remaining onions and the Swiss cheese over the top of the meatloaf. Cover and cook on High for 10 minutes until the cheese melts and looks glossy.
  2. Lift the meatloaf out using the foil sling and rest for 10 minutes before slicing and serving. This lets the juices set so the loaf cuts cleanly.

Notes

Pro tip: For best texture, avoid overmixing the meat—combine just until the binder is evenly distributed. Refrigerate leftovers in an airtight container for up to 3 days; freeze for up to 2 months (wrap slices well). For a lighter option, use lean ground beef (90% or higher) to reduce fat while keeping the French onion flavor.
