Ingredients

Frozen corn
  • 4 cup frozen corn thawed
Cream cheese
  • 8 oz cream cheese cubed
Butter
  • 0.25 cup butter
Sour cream
  • 0.5 cup sour cream
Ranch seasoning packet
  • 1 packet (1 oz) ranch seasoning
Shredded cheddar
  • 1 cup shredded cheddar divided; measure 1 cup for mixing
  • 0.5 cup shredded cheddar divided; use for topping
Bacon
  • 6 slice bacon cooked and crumbled
Jalapeno
  • 1 jalapeno seeded and diced
Green onions
  • 2 green onions sliced

Equipment

  • 1 sheet pan

Method

Prep and mix
  1. Preheat the oven to 350F, then grease a 2-quart baking dish. This prevents sticking and helps the top brown evenly.
  2. Melt the cream cheese and butter together until smooth, then stir in the sour cream and ranch seasoning. Keep stirring until the mixture looks fully combined and glossy.
  3. Fold in the corn, 1 cup cheddar, most of the bacon, and the jalapeno. Stir just until the corn is evenly coated and no dry pockets remain.
Bake and finish
  1. Spread the mixture into the greased dish, then top with the remaining cheddar and bacon. Spread evenly so the bake sets at the same pace.
  2. Bake for 25-30 minutes at 350F until bubbly and golden. Look for edges that bubble actively and a browned, melted top.
  3. Sprinkle with the green onions, then serve. The fresh slices add color and a mild bite right before eating.

Notes

For the creamiest texture, fully thaw the frozen corn so the casserole doesn’t release extra water while baking. Refrigerate leftovers in an airtight container for up to 3-4 days; reheat in the microwave or in a 325F oven until warmed through. Freezing is not recommended because the cream cheese mixture can get grainy when thawed. For a lower-fat option, use reduced-fat cream cheese and sour cream (the bake will still set, though it may be slightly less rich).
