Ingredients
  

Ground beef mixture
  • 1.5 lb ground beef
  • 1 onion
  • 3 garlic
  • 1 packet (1 oz) ranch seasoning mix
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 0.5 cup milk
  • 1 can (10 oz) Rotel tomatoes
Pasta and cheese topping
  • 3 cup rotini pasta, cooked and drained
  • 2 cup cheddar cheese, shredded
  • 0.5 cup mozzarella, shredded
  • 0.25 fresh chives

Method
 

Preheat and assemble
  1. Preheat oven to 375°F and grease a 9x13 baking dish with light coating to prevent sticking.
  2. Brown ground beef with diced onion in a skillet over medium-high heat, drain excess fat, then add minced garlic and ranch seasoning and cook 1 minute.
  3. Whisk cream of chicken soup, sour cream, and milk until smooth, then stir in the Rotel tomatoes.
  4. Combine cooked and drained rotini with the beef mixture and the soup mixture in a large bowl, then toss until evenly coated.
  5. Transfer the mixture to the prepared baking dish, top evenly with shredded cheddar and mozzarella, and spread to cover most of the surface.
Bake and finish
  1. Bake uncovered for 25–30 minutes at 375°F until the cheese is golden and bubbly around the edges.
  2. Garnish with fresh chives and serve hot so the topping stays set and glossy.

Notes
