Ingredients

Caramelized onion and filling
  • 2 tbsp butter
  • 1 yellow onion large; thinly sliced
  • 8 oz cremini mushrooms finely chopped
  • 1 apple small; finely diced
  • 1 tsp fresh thyme leaves
  • 1 tbsp balsamic vinegar
  • 0.5 salt and pepper to taste
Phyllo cups and topping
  • 2 boxes (15 count each) mini phyllo shells 24 used
  • 1 cup shredded Gruyere
  • 1 fresh thyme for garnish

Equipment

  • 1 sheet pan

Method

Caramelize the onions
  1. Melt butter over medium-low heat. Cook onion 20-25 minutes, stirring often, until deep golden and jammy.
  2. Add mushrooms and apple to the pan. Cook 6-8 minutes until mushrooms are browned and liquid evaporates.
  3. Stir in thyme and balsamic vinegar. Season with salt and pepper.
Fill and bake
  1. Preheat oven to 350F. Arrange phyllo shells on a baking sheet.
  2. Fill each shell with the onion mixture. Top each with shredded Gruyere.
  3. Bake 8-10 minutes until cheese is melted and shells are crisp. Garnish with fresh thyme and serve warm.

Notes

For extra crisp phyllo, bake right after filling and keep the onion-mushroom mixture at room temperature before assembling. Store leftovers in the refrigerator up to 3 days; reheat in a 350F oven for 6-8 minutes to re-crisp. Freezing is not recommended because phyllo shells soften after thawing. For a lighter option, use reduced-fat Gruyere or a blend of Gruyere and part-skim mozzarella.
