Ingredients

Boneless country-style ribs
  • 3 lb boneless country-style pork ribs Boneless for easy, fork-tender shredding.
  • 2 tbsp brown sugar For the smoky-sweet crust.
  • 1 tbsp smoked paprika Adds color and deep porky flavor.
  • 1 tsp garlic powder Savory, classic BBQ rub base.
  • 1 tsp onion powder Rounds out the rub.
  • 1 tsp cumin Warm, earthy background note.
  • 0.5 salt and pepper to taste Season the rub to preference.
  • 0.75 cup BBQ sauce For brushing and serving.
  • 1 4 cup apple cider vinegar Provides moisture during the covered bake.

Equipment

  • 1 sheet pan

Method

Preheat and rub
  1. Preheat the oven to 300°F. Mix the dry rub ingredients and coat the ribs on all sides.
  2. Arrange the coated ribs in a single layer in a baking dish. Make sure the pieces aren’t stacked so they cook evenly and stay tender.
Low-and-slow bake
  1. Pour the apple cider vinegar into the bottom of the dish and cover tightly with foil. Bake for 2 hours until the ribs are very tender.
Broil-hot finish for caramelized glaze
  1. Uncover the dish and brush the ribs generously with BBQ sauce. Increase the oven to 400°F and bake for 20–25 minutes until the sauce caramelizes.
  2. Serve immediately with extra BBQ sauce on the side. Letting it rest briefly helps the sticky glaze cling to the meat.

Notes

For maximum fall-apart texture, keep the foil sealed during the first bake so the ribs steam in their moisture. Refrigerate leftovers up to 3–4 days; reheat covered in a 300°F oven until hot through. Freezing is yes—freeze in portions and reheat from thawed or gently reheat from frozen. For a lighter swap, use a no-sugar-added BBQ sauce to keep the caramelized crust while reducing added sugar.
