Ingredients

Pork chops
  • 4 bone-in pork chops 1 inch thick
Seasoning and coating
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp dried Italian seasoning
  • 0.5 tsp onion powder
  • 0.5 tsp brown sugar
  • salt and black pepper to taste
Serving
  • 1 lemon wedges for serving

Equipment

  • 1 air fryer

Method

Prep the chops
  1. Pat pork chops completely dry to remove surface moisture for a crispy crust. Keep them dry and ready for seasoning.
  2. Mix garlic powder, smoked paprika, dried Italian seasoning, onion powder, brown sugar, salt, and black pepper in a bowl. Stir until the rub looks evenly blended.
  3. Brush pork chops with olive oil and rub the spice mixture firmly all over both sides. Press the seasoning so it adheres for an even, golden crust.
Air fry
  1. Preheat air fryer to 400°F for 3 minutes. This jump-starts browning for deep golden color.
  2. Air fry pork chops at 400°F for 10–12 minutes, flipping halfway through. Cook until the internal temperature reaches 145°F and the crust is deeply golden and fragrant.
Rest and serve
  1. Rest pork chops for 3 minutes before serving. This helps the juices settle for a juicy interior.
  2. Serve with lemon wedges. Squeeze over the chops for bright flavor right before eating.

Notes

For best crisping, make sure the chops are truly dry before oiling—moisture is what prevents browning. Refrigerate leftovers in a sealed container for up to 3 days; reheat in the air fryer at 350°F for 3–4 minutes. Freezing is not recommended for maximum texture, but you can freeze cooked chops for up to 2 months and reheat gently. For a lower-sugar option, replace the brown sugar with an equal amount of sugar-free brown sugar substitute (or omit for a more savory crust).
