Ingredients

Little smokies
  • 1 package (14 oz) little smokies
Bacon
  • 1 lb thin-cut bacon cut each slice into thirds
Brown sugar coating
  • 1 cup brown sugar packed
  • 0.25 tsp cayenne pepper
Glaze
  • 2 tbsp butter melted

Equipment

  • 1 sheet pan

Method

Prep and preheat
  1. Preheat the oven to 350°F, then line a baking sheet with foil and parchment for easy cleanup.
Wrap and coat
  1. Wrap each little smokie with a piece of thin-cut bacon, then secure it with a toothpick.
  2. Mix the packed brown sugar with cayenne pepper, then roll each wrapped smokie in the mixture to coat completely.
Bake
  1. Arrange the coated smokies on the prepared pan, then drizzle with the melted butter and sprinkle with any remaining sugar.
  2. Bake at 350°F for 30-35 minutes until the bacon is crisp and the sugar is bubbly and caramelized.
Finish
  1. Cool for 5 minutes so the glaze sets, then serve warm.

Notes

For the crispiest bacon, spread the smokies so they don’t touch on the parchment-lined pan, and avoid overcoating beyond what will adhere. Store leftovers covered in the refrigerator for up to 3 days; reheat in a 300°F oven until warmed through. Freezing isn’t recommended because the caramelized sugar coating can become sticky after thawing. For a lower-sugar option, use a brown-sugar substitute that measures cup-for-cup in place of the brown sugar.
