Ingredients

Pork cider sauce
  • 4 bone-in pork chops Use 4 chops.
  • 0.5 salt and pepper to taste Season the pork and adjust to preference.
  • 2 tbsp olive oil For searing the pork chops.
  • 1 onion, diced Small onion, diced.
  • 2 cloves garlic, minced Minced garlic cloves.
  • 1 cup apple cider For braising and sauce base.
  • 0.5 cup chicken broth Adds savory depth to the sauce.
  • 1 tbsp Dijon mustard Stirs into the cider sauce.
  • 1 tbsp fresh thyme Fresh leaves for the sauce.
  • 1 apple, cored and sliced Sliced for pan-frying alongside.
  • 2 tbsp butter For caramelizing apple slices.
Mashed Sweet Potatoes
  • 2 lb sweet potatoes Boiled and mashed until smooth.
  • 3 tbsp butter For rich mashed texture.
  • 0.25 cup cream For silky mash (heavy cream preferred).
  • 0.5 salt To season the mash.
  • 0.25 cinnamon Pinch of cinnamon for warm flavor.

Equipment

  • 1 cast iron skillet

Method

Make mashed sweet potatoes
  1. Boil sweet potatoes in salted water until tender, 10–15 minutes, then drain completely with visible steam escaping the pot as the last water clears.
  2. Mash sweet potatoes with butter, cream, salt, and cinnamon until smooth and silky, about 1–2 minutes, keeping the texture fluffy and lump-free, then cover to keep warm.
Sear and braise the pork chops
  1. Pat bone-in pork chops dry, then season with salt and pepper to taste.
  2. Heat olive oil in a cast iron skillet over medium-high heat and sear pork chops until deeply browned, 4–5 minutes per side, setting them aside after the second side is golden.
  3. In the same pan, cook diced onion until softened, about 3 minutes, scraping up browned bits.
  4. Add minced garlic and cook 30 seconds, stirring constantly until fragrant.
  5. Pour in apple cider and chicken broth, then simmer 3 minutes until slightly reduced and glossy.
  6. Stir in Dijon mustard and fresh thyme, then return the pork chops and simmer 5 minutes until cooked through, with sauce visibly thickening around the meat.
Caramelize apples and serve
  1. Pan-fry sliced apple in butter until golden, 3–5 minutes per side, until edges look caramelized.
  2. Serve pork chops over mashed sweet potatoes with apple cider thyme sauce and top with the caramelized apple slices.

Notes

For extra smooth mash, warm the butter and cream together before stirring so it incorporates quickly. Refrigerate leftovers in a sealed container up to 3 days; reheat gently in a skillet with a splash of water or broth to loosen the sauce. Freezing: freeze the pork and sauce up to 2 months, but expect softer apples after thawing. For a lighter version, use half-and-half instead of cream in the mash and keep butter to 2 tbsp.
