Prep and preheat
- Preheat the oven to 350°F and grease a 9x13 baking dish.
- Brown the ground beef in a skillet over medium-high heat, breaking apart, until no longer pink; drain excess fat and season with salt and pepper.
Assemble and bake
- Spread the uncooked long-grain white rice evenly in the greased baking dish.
- Mix the cream of mushroom soup with the beef broth until smooth, then pour over the rice.
- Top with the seasoned browned ground beef, then cover tightly with foil and bake for 35 minutes.
- Uncover and scatter the shredded sharp cheddar over the top, then bake for 10 more minutes at 350°F until the cheese is golden and the rice is tender.
Notes
For best texture, keep the rice evenly distributed so it cooks through by the end of the bake; cover tightly during the first 35 minutes to prevent drying. Refrigerate leftovers in an airtight container for up to 4 days; reheat in the oven or microwave until hot. Freezing is not recommended due to rice texture. For a lighter option, use reduced-fat cheddar and reduced-sodium beef broth (the bake timing stays the same).
