Ingredients
  

For taco potatoes
  • 2 lb Yukon gold potatoes cubed
  • 2 tbsp taco seasoning
  • 3 tbsp olive oil
For taco beef
  • 1 lb ground beef
  • 1 taco seasoning packet 1 packet
  • 0.25 cup water
For toppings
  • 1 can (15 oz) black beans warmed
  • 1 cup corn kernels
  • 1.5 cup shredded cheddar
  • 0.33 sour cream
  • 0.5 pico de gallo
  • 1 avocado
  • 0.5 jalapeño
  • 0.25 cilantro
  • 0.5 lime squeeze

Method
 

Roast the taco potatoes
  1. Preheat the oven to 425F. Toss the cubed Yukon gold potatoes with taco seasoning and olive oil until evenly coated.
  2. Spread the seasoned potatoes on a sheet pan in a single layer. Roast for 25-30 minutes, stirring once halfway, until crispy and golden around the edges.
Cook the taco beef
  1. Brown the ground beef in a skillet over medium-high heat until no longer pink. Add taco seasoning and water, then simmer for 3 minutes to thicken slightly.
Assemble taco bowls
  1. Build each bowl with crispy roasted potatoes on the bottom. Add the taco beef, then top with warmed black beans and corn.
  2. Finish each bowl with shredded cheddar, sour cream, pico de gallo, avocado, jalapeño, and cilantro. Squeeze a lime over the top right before serving.

Notes

Pro tip: don’t overcrowd the sheet pan—spreading potatoes in a single layer helps them turn crisp instead of steaming. Refrigerate leftovers in sealed containers up to 3 days; reheat potatoes in the oven or air fryer to regain crunch. Freezing is not recommended for best texture. For a lighter option, swap half the cheddar for reduced-fat cheese and use lean ground beef.
