Ingredients

breakfast sausage
  • 1 lb breakfast sausage
onion
  • 1 onion
celery stalks
  • 2 celery stalks
herb stuffing mix
  • 1 box (6 oz) herb stuffing mix
chicken broth
  • 1 cup chicken broth
eggs
  • 2 eggs
Parmesan
  • 0.5 cup shredded Parmesan
fresh sage
  • 1 tbsp fresh sage, chopped
whole berry cranberry sauce
  • 1 can (14 oz) whole berry cranberry sauce
orange juice
  • 2 tbsp orange juice
Dijon mustard
  • 1 tbsp Dijon mustard

Equipment

  • 1 sheet pan

Method

Bake the stuffing bites
  1. Preheat the oven to 375F and line a baking sheet with parchment (visual cue: parchment should lie flat with no wrinkles).
  2. Brown the breakfast sausage with the diced onion and celery for 8-10 minutes, breaking it up as it cooks (visual cue: sausage should be browned and crumbly).
  3. Drain excess fat and let the sausage mixture cool slightly while you prep the rest (visual cue: the mixture looks less wet and warm).
  4. Stir in the herb stuffing mix, warm chicken broth, beaten eggs, shredded Parmesan, and chopped fresh sage until moist and evenly combined (visual cue: no dry stuffing pockets remain).
  5. Roll the mixture into 1 1/2-inch balls and place them on the baking sheet (visual cue: balls look uniform in size).
  6. Bake for 20-25 minutes until golden and crisp on the outside (visual cue: edges turn deeper brown and feel firm).
Make the cranberry dipping sauce
  1. Warm the whole berry cranberry sauce with orange juice and Dijon mustard until smooth (visual cue: sauce becomes glossy and pourable).
  2. Serve the warm cranberry sauce alongside the baked sausage stuffing bites for dipping (visual cue: one bite dunked shows sauce clinging to the crisp exterior).

Notes

For best crisp edges, let the sausage mixture cool slightly before mixing with eggs so the mixture binds without turning watery. Store baked bites in the refrigerator up to 3 days and rewarm at 350F until hot and crisp again; freeze cooked bites up to 2 months, then reheat from frozen. For a lighter option, use turkey sausage instead of breakfast sausage while keeping the rest unchanged.
