Ingredients

cremini mushrooms, halved
  • 1.5 lb cremini mushrooms Halve so they roast evenly.
olive oil
  • 3 tbsp olive oil Used to coat mushrooms before roasting.
garlic
  • 4 cloves garlic Minced for quick browning and flavor.
fresh thyme leaves
  • 1 tbsp fresh thyme leaves Leaves only; reserve stems if desired.
salt
  • 0.5 tsp salt For seasoning the mushrooms.
black pepper
  • 0.25 tsp black pepper Ground black pepper.
butter
  • 2 tbsp butter Stirs into garlic and thyme during the second roast.
lemon juice
  • 1 tbsp fresh lemon juice Drizzle at the end for brightness.
fresh parsley, chopped
  • 2 tbsp fresh parsley Chopped; used right before serving.

Equipment

  • 1 sheet pan

Method

Roast the mushrooms
  1. Preheat the oven to 425F so it’s fully hot for browning. Set a sheet pan inside the oven while it heats if you want extra edge caramelization.
  2. Toss the cremini mushrooms with olive oil, salt, and black pepper, then spread them in a single layer on a sheet pan. Keep them spaced so they roast rather than steam.
  3. Roast for 15 minutes until the mushrooms release their liquid and begin to brown, visible around the edges. Stir once halfway through if your oven has hot spots.
Add garlic, thyme, and finish roasting
  1. Add garlic, thyme, and butter to the mushrooms, toss to coat, and return them to the oven. The butter should melt and cling to the mushrooms.
  2. Roast 8 to 10 minutes more until deeply golden, with darker browned spots across the pan. Watch closely near the end to prevent burned garlic.
Season and serve
  1. Drizzle with fresh lemon juice and toss lightly just to coat. The mushrooms should smell bright and buttery.
  2. Sprinkle with fresh parsley and serve hot. Finish with a final pinch of flaky salt if desired.

Notes

Pro tip: Don’t overcrowd the sheet pan—single-layer spacing is what turns moisture into browning. Store leftovers in an airtight container in the refrigerator up to 3 days; reheat in a 400F oven for 6–8 minutes to re-crisp. Freezing isn’t recommended for best texture. For a dairy-free swap, use olive oil or vegan butter in place of butter.
