Prep and filling
- Preheat the oven to 350°F so it’s ready when the loaf goes in.
- Mix the cream cheese, diced jalapeños, and shredded cheddar for the filling, then set it aside.
Form the jalapeño meatloaf
- Combine the ground beef, breadcrumbs, eggs, milk, minced garlic, Worcestershire, smoked paprika, and salt and pepper until just mixed.
- On plastic wrap, press the meat mixture into a 10x14 inch rectangle, then spread the filling across the center.
- Roll the meat tightly into a log, seal the ends, and place it seam-side down in a loaf pan.
Bake and slice
- Lay the bacon strips across the top, sprinkle with the remaining cheddar, brush with ketchup glaze, and bake 60–70 minutes until the internal temperature reaches 160°F.
- Rest the jalapeño popper meatloaf for 10 minutes before slicing, so the creamy center settles and slices cleanly.
Notes
For the cleanest slices, wait the full 10-minute rest before cutting so the jalapeño-cream cheese center doesn’t ooze out. Refrigerate leftovers in an airtight container for up to 3 days; freeze baked slices wrapped well for up to 2 months. For a lighter option, swap half the ground beef with ground turkey to reduce fat while keeping the same loaded spicy flavor.
