Ingredients

Honey Apricot Goat Cheese Spread
  • 8 oz goat cheese Softened.
  • 4 oz cream cheese Softened.
  • 2 tbsp milk
  • 1 cup apricot preserves Use 1/3 cup.
  • 2 tbsp honey
  • 0.33 cup dried apricots Finely chopped.
  • 2 tbsp pistachios Chopped.
  • 1 tsp fresh thyme leaves
  • 0.125 flaky sea salt Pinch.
  • 1 Crackers or crostini For serving.

Equipment

  • 1 stand mixer

Method

Make the goat cheese base
  1. Beat goat cheese, cream cheese, and milk until light and smooth, scraping the bowl as needed for an even texture.
  2. Transfer the mixture to a shallow serving bowl and spread it smooth, making a swirl in the center.
Warm the apricot-honey topping
  1. Warm apricot preserves with honey in a microwave for 20-30 seconds, then stir until loose and pourable.
Assemble and serve
  1. Spoon the apricot honey over the goat cheese, keeping the glaze centered over the swirl.
  2. Top with dried apricots, pistachios, thyme, and flaky sea salt for contrast and crunch.
  3. Serve immediately with crackers or crostini on the side.

Notes

Pro tip: soften the goat cheese and cream cheese at room temperature for smoother blending—then assemble right before serving so the pistachios stay crisp. Refrigerate leftovers in a sealed container up to 3 days; freeze is not recommended due to texture changes in the cheeses. For a dairy-light option, use reduced-fat cream cheese and a lighter goat cheese if you prefer, keeping the same mixing and topping steps.
