Green Bean Bundles

Green Bean Bundles with bacon and a sticky brown sugar garlic butter glaze—blanched until bright-tender, then baked until bubbly and crisp. The bundled shape helps the beans stay juicy while the bacon crisps in the oven.

Ingredients

Green beans
  • 1.5 lb fresh green beans, trimmed
Bacon
  • 8 bacon, halved crosswise
Butter glaze
  • 0.25 cup butter, melted
  • 0.333 cup brown sugar
  • 2 garlic, minced
  • 1 tbsp soy sauce
  • 0.25 tsp black pepper

Equipment

  • 1 sheet pan

Method

Blanch the green beans
  1. Preheat oven to 400F. Blanch green beans in boiling water for 3 minutes, then plunge into ice water and drain.
Bundle and wrap
  1. Gather 8-10 beans into a bundle and wrap with a half slice of bacon, placing seam-side down in a baking dish.
Make the glaze
  1. Whisk melted butter, brown sugar, garlic, soy sauce, and black pepper until smooth.
Bake with glaze
  1. Pour the glaze evenly over the bundles. Bake for 25-30 minutes until bacon is crisp and glaze is bubbly.
Finish and serve
  1. Spoon the pan glaze over the bundles for extra coating. Serve warm.

Notes

For even bacon crisping, keep the bacon seams facing down and avoid crowding the baking dish. Refrigerate leftovers in an airtight container for up to 3 days and reheat at 350F until warmed through; freezing is not recommended because the bacon texture can soften. For a gluten-free option, use tamari instead of soy sauce (same flavor profile, no wheat).
