Boil and cool the eggs
- Place the eggs in a Dutch oven and cover with cold water, then bring to a boil over high heat. Visual cue: large bubbles should actively break the surface.
- Cover the pot, remove from the heat, and let the eggs stand for 12 minutes. Visual cue: egg whites will be fully set around the edges when you cut one.
- Chill the eggs in an ice bath for 10 minutes, then peel them. Visual cue: the shells should slide off more easily after cooling.
- Halve the eggs lengthwise and place the yolks in a mixing area while keeping the whites intact. Visual cue: you’ll see a clean yolk cavity in each half.
Make the crack chicken filling
- Mash the yolks with mayonnaise, cream cheese, and dry ranch seasoning until smooth. Visual cue: the mixture should look thick and creamy without lumps.
- Fold in the shredded chicken, shredded cheddar, and half the bacon. Visual cue: the mixture will turn speckled with chicken and cheese.
Fill, top, and chill
- Spoon the filling generously into the egg white halves. Visual cue: each cup should be heaped and slightly mounded.
- Top with the remaining bacon and the chopped chives, then chill until serving. Visual cue: the filling firms up and the toppings stay in place.
Notes
For the cleanest deviled egg halves, chill the peeled eggs for a few extra minutes before halving and filling to reduce crumbling. Refrigerate in a covered container up to 3 days; for best texture, don’t freeze. If you want a lighter option, swap mayonnaise for light mayonnaise and use reduced-fat cream cheese (the filling will still hold together well).
