Boil, chill, and prep the eggs
- Place 12 large eggs in a pot, cover with cold water, and bring to a boil; then cover and remove from heat. Let the eggs stand for 12 minutes with a visible steam/boil stop cue.
- Chill the eggs in an ice bath for 10 minutes to stop cooking. You should see the eggs cool quickly and feel firm when handled.
- Peel the eggs and halve them lengthwise. Set the halved egg whites aside with the yolks exposed for filling.
Make the deviled yolk filling
- Mash the egg yolks with mayonnaise, Dijon mustard, white vinegar, salt, and black pepper until smooth. Keep mashing until the mixture looks creamy and lump-free.
- Pipe the filling into the egg whites. Fill each half fully so the centers look neatly topped.
- Arrange the filled deviled eggs in the center of a large board. Leave space around them for the topping bowls.
Set up the topping board
- Fill small bowls with bacon, smoked salmon, pickled jalapenos, everything bagel seasoning, shredded cheddar, fresh chives, and capers. Distribute each topping clearly so guests can mix freely.
- Arrange the bowls around the eggs and add paprika and hot sauce for topping. Serve immediately with a clear cue for guests to top their own.
Notes
For the smoothest filling, mash the yolks thoroughly before mixing in mayonnaise and seasonings, and pipe while the mixture is still cohesive. Store assembled eggs covered in the refrigerator for up to 2 days; keep any extra toppings separately for freshness. Freezing is not recommended for deviled eggs. Dietary swap: for a lighter version, use reduced-fat mayonnaise (the flavor stays close but the texture may be slightly softer).
