Ingredients

naan flatbreads
  • 2 naan flatbreads
olive oil
  • 1 tbsp olive oil
brie
  • 6 oz brie sliced
cranberry sauce
  • 0.5 cup cranberry sauce whole berry
pecans
  • 0.25 cup pecans chopped
baby arugula
  • 1 cup baby arugula
honey
  • 1 tbsp honey
fresh rosemary
  • 1 tsp fresh rosemary chopped

Equipment

  • 1 sheet pan

Method

Bake the flatbread
  1. Preheat the oven to 425F. Place the naan flatbreads on a baking sheet and brush with olive oil for even browning.
  2. Arrange the brie slices over the flatbreads. Ensure the slices cover the surface so the brie melts into pools.
  3. Dot the flatbreads with spoonfuls of cranberry sauce, then sprinkle with chopped pecans and fresh rosemary. Aim for even coverage so every bite has sweet-tart and herbal notes.
  4. Bake for 10-12 minutes at 425F until the brie is melted and the edges are crisp. Look for bubbling cheese and golden naan edges as the cue.
Finish and serve
  1. Top with the baby arugula. Add it after baking so it stays bright and slightly crisp.
  2. Drizzle with honey over the warm flatbread. Use a light zigzag so the honey doesn’t pool.
  3. Cut into squares and serve warm. Slice while hot so the cheese stays fluid.

Notes

Pro tip: use sliced brie that’s close to the naan size so it melts quickly and evenly. Store leftovers covered in the refrigerator up to 2 days; reheat on a sheet pan at 375F for about 5-7 minutes to re-crisp edges. Freezing isn’t recommended because arugula will wilt on thawing. For a vegetarian-friendly swap, keep everything the same (this recipe is already vegetarian) and choose any dairy-free brie-style alternative if needed.
