Ingredients

Dry and flavor
  • 0.3333333333 cup brown sugar Packed
  • 1 tsp ground cinnamon
  • 1.5 cups all-purpose flour
  • 0.6666666667 cup granulated sugar
  • 1.75 tsp baking powder
  • 0.5 tsp salt
Wet ingredients and apples
  • 0.5 cup butter, softened
  • 2 eggs Large
  • 1.5 tsp vanilla extract
  • 0.5 cup milk
  • 2 apples Peeled and chopped
Glaze
  • 1 cup powdered sugar
  • 2 tbsp milk For glaze

Equipment

  • 1 sheet pan
  • 1 stand mixer

Method

Prep the loaf pan and cinnamon sugar
  1. Preheat the oven to 350F. Grease and line a 9x5-inch loaf pan.
  2. Mix the brown sugar with the ground cinnamon. Toss the chopped apples with 2 tablespoons of the cinnamon sugar.
Make the batter
  1. Beat the softened butter and granulated sugar until fluffy. Beat in the eggs and vanilla extract until smooth.
  2. Whisk the all-purpose flour, baking powder, and salt together. Add to the batter alternately with the milk, mixing just until combined.
Layer, swirl, and bake
  1. Spread half the batter in the loaf pan. Top with half the apples and half of the remaining cinnamon sugar.
  2. Spread the remaining batter over the apples. Add the rest of the apples and the remaining cinnamon sugar in an even layer.
  3. Swirl gently with a knife to create cinnamon-brown sugar ribbons through the loaf. Bake for 50-55 minutes, until a toothpick comes out clean.
Glaze and cool
  1. Cool the loaf for 15 minutes before glazing. Whisk the powdered sugar with enough milk to make a thick drizzle.
  2. Drizzle the vanilla glaze over the warm loaf. Let it sit briefly so the glaze sets before slicing.

Notes

Pro tip: For the cleanest swirl and best texture, layer the apples evenly and swirl lightly without stirring the layers together. Store in the fridge up to 4 days, tightly covered; freeze slices up to 2 months for best freshness. For a lighter option, substitute half the butter with an equal amount of unsweetened applesauce.
